Introducing
The rations of people in disastrous regions provided by aid organization usually focus on carbon hydrate from grain to supply energy and almost shortage of vitamin , fibre from greens and fruits. The cause is very simple : because of contrary to grain that is easy to preserve and transport ; vegetables spoil fast, so bulky that very difficult to move them from other to another place. Morever you also can not grow them in limit region because this process needs long times, tools, fertilizer and places ! In conclusion, that is reason shortage is unavoidable.
Bean Sprouts( or Moyashi ) :a Magic Vegetable
Bean Sprout can make from many kind of bean , such as peptit pois (green peas), red bean, black bean, white cowpeas, soy bean, peanut, French peas … but mung bean is most popular
Analysis every 100gr mung sprout contain 5.5gr protid, 5.3gr glucid, 38gr Ca, 91mgr P, 1.4gr Fe, 0.2mgr vitamin B1, 0.13mgr vitamin B2, 0.75mgr vitamin PP, 0.09mgr vitamin B6, 10mgr vitamin C,some of enzymes,especially with great content of vitamin E (15-25mgr) , 44 calorie and the remain is water

The way to get them
Method 1:
Step 1: Soaking cleaned green bean in water from t? 6-8 hours until swelling. After 8 hour soaking, their size become double in size.
Step 2: Putting a wetting tissue on a basket ,bucket, basin , pot, vessel, container, tank, barrel, keg, soiltub, tub, etc.
Spread a line of green bean on tissue, after that putting the second wetting tissue on green bean and do the same until green bean clear. On the top layer, you can put a heavy load ( a water-filled pot, etc) so that the sprouts are jammed and grow more plumply.
Step 3: Place the container in airy spot and away from sunlight . Water the beans twice a day.
After 3-4 days , the sprouts will grow and push the weight up. Don’t worry if the weight prevents the srpouts from growing. Vice versa, the sprouts will grow even bigger and the roots would be shorter.
Remember to drain the container well or the beans will drown.
Humid retain can be cotton fabric, bath-towel, handkerchief, cloth, etc or even ash, sand and sponge.
If the humid retain is ash, you only need to spray water on the beans once a day because ash can retain water very good.
Method 2: (If the disastrous area close to a river):
Use a rake to paw the sand bank, then sow the beans . Lastly, cover the beans again with sand ,rocks, gravels, etc. You do not have to water the land regularly since the moisture from the river is enough.
Moyashi likes moisture, clean place. Therefore, never keep humidity for them with dirty water and container if not they will not grow or spoil right after
As a whole, growing moyashi process is simple with main principles : selecting good seed (new and uniform), avoid sunlight reaches the seeds, keeping enough humidity for them in the containers which are common objects, even broken ones in the disaster.
With the time to collect is quick, cultivating is easy , yield is high ( average 1kg bean turns out about 10kg sprouts), nutrient value is rich and tasty is delicious, Moyashi is not only suitable with disaster areas that also in common life
For processing ,they can be used in fresh ( best way to use for nutrient and enjoy sides) or cooked into many different dishes as boiling, fry, stir fry with a little water ,soup ,steaming …

Mung beans can be packed and reserved at hand in storage. Each package’ s label should be showed the 3-steps to grow sprout and how to use them on each side. Collecting time may be shorten from 3-4 days to 1-2 days if the irrigation water is added enzyme catalysis. This can also be packed in small pack and enclosed in each package of bean.
